Effectively 0 fat (I skinned it out and deboned the breast off, then got the thighs and legs off, carcass to the woods)
Breast tastes same as store bought, thighs and legs have a TON more cartilage and connective tissue so they make really great soup or stock. Sometimes the thigh and leg meat ends up being super chewy, sometimes not. This is a bird just into maturity so should be good eats all the way around.
