Car is a 15 911S.
First you have to find the fill plug. Then the proper drain plug. It's a big secret at the dealership. There's two fluids in the box, so I'm told. The gear oil, and the ATF oil. You don't want to mix up by accident. Tragedy will ensue.
Next is the refill method. Pat your head, rub your tummy, heat the fluid to a temp, dip your finger. I'd say on the ATF, capture what comes out and refill that exact amount. You may have to do it a couple times since it all doesn't drain when you pull the plug.
On the gear lube, just put back what you take out, once.
I've had the dealer do the ATF at 40,000 and 80,000 miles. At 120,000 I'll have them do both.
