I don't understand folks that want extremes at places that are likely the opposite of the extremes.
It is possible to get good gluten free pasta, pizza crust, and bread these days, but of course, if the person is super picky or has an actual medical issue, there's going to be "cross contamination" since the kitchen is probably full of gluten.
But the whole vegan thing is crazy. "I'm sorry, we don't have any vegan options." should be the standard response.
