Trying to pick wheels and tires for my Truck makes my brain hurt!

I think I've fried my brain on this one. My F250 has General Grabber ATX 275/70r18 tires on stock 18x8 wheels with a +40 offset (standard) and 8-170 bolt pattern. The tire diameter is 33.2 and width is 11. My truck is stock ride height, no lift or levelling kit. I've been searching for a combo that isn't going to require a speedo recalibration while also trying to avoid any potential for rubbing. My brain hurts.

I picked out, what I think, is a nice looking set or Fuel Quake Platinum wheels in 18x9 with a +1 offset and some Falken Wild Peak tires (not sold on load range E tires yet) but Tire Rack warns that this setup might require modifications to avoid rubbing. According to the Fuel website, these wheels are "sure fit"

Any tire and wheel gurus around here that can make the pain stop??
