Its really both. If the beans are old then there's no point. But ground coffee has a lot more surface area per weight so it oxidizes very quickly. If you have good fresh beans you can easily taste an hour in the cup - actually you probably couldn't even pull a good espresso shot with coffee ground an hour ago - stuff won't pack well.
