I pulled the plastic off my 1975, and paid the extrusion down over the bare metal. Same on the glove box. My glove box does not fit as flush as I would like, and many of the early cars I have seen their glove box is not flush with the dash.....nor are many of the mid year cars I have seen.

I did think about knee pads with A/C vents in them when I re-did my dash, as I know I would be going A/C. With my Classic Retrofit system and my vent replacing the fuel/oil-level gauge I am thinking about eliminating those little vents not eh edge of the dash. On my car they often close themselves, and I don't notice there is a big difference in cooling. Might be a thought. I also don't have a radio am may put a second vent int eh radio delete panel instead of those 2 small ones at the edge of the dash.
