As others have mentioned, the Rennline dash backdate kit is a great way to go. You can have your trimmer cover the main part in leather, then make an insert for the center out of whatever material you like. You have to remove all the existing dash kneepads and foam padding, so down to the metal. The backdate dash cover then screws into the metal dash. You lose your glovebox doing this but the look is worth it IMO. Any holes for extra stuff like dash switches need to be drilled. There are knockouts for the radio and climate control.
