thin cheap carbon steel. as you mention it needs to be good at quick temp changes. Yes the right tools make it much easier to work with. mindset is small batch cooking.

Well i had #6 adjusted perfectly but then just before i tightened it a butterfly in Zimbabwe farted and now i have to start all over again!
