I didn't read through the whole thing but the derailleur is bent inward. That shouldn't bring about the chain jumping unless you back peddled. I've had that bent condition and shifts seemed better when it was perfectly aligned.
Could be photo error, but IDTS.
I don't like 8-speed clusters because of the chain angles needed.
