Your ‘88 has a fan on the front oil cooler, and the ‘84 did not, although the fan (stock) comes on at ~220F.
Couple of things:
1. 185F is not abnormal. My (higher compression) 3.2SS barely sees 190F even when wringing the hell out of it. Needs to be a hot day or high altitude to break 210F. My fan comes on at 195F though (aftermarket thermoswitch).
2. Check resistance at the gauge sender wire is to spec.
I suspect it’s just #1.
