I would highly recommend taking State Highways out west. They are usually 4 lanes divided by median and speeds are same as Interstate speed limits. The same amount of gas stations and other stuff that you will need. Traffic is lighter but still present. Far more scenic.
I drove Reno to San Angelo Texas once. About 90% on State Highways. It was incredible. Only once did we stretch out getting gas in BFE Nevada. It was a close one and that was in the late 80s. I wouldn't even sweat it today.
We've driven from San Antonio to Crested Butte Colorado twice recently. Very little interstate.
I second whomever mentioned 18 wheelers on I40. They aren't as prevalent on the State Highways. It's much more calming and you aren't exhausted by them and other traffic at the end of the day.

BTW: there is a thread on this forum from about 10 years ago where a member drove from the East Coast to Washington State or Oregon (IIRC) in a 1970ish 911. It's a great thread if anyone cares to find it.
