I have religiously emptied the tank on my snowblower and ran it dry at the end of every season and have had zero problems.
I will add that I use non-ethanol fuel and because it is a smallish paddle type snowblower, I can tip it on its side and pour the gas back in the can and then run it dry.
On a big blower, you could probably try and predict the amount of fuel needed on the last few snows so there isn’t much in there and then run it dry.
