Pork roast, 5#, 3.5 hours at 300ºF, 15 minutes at 450. Perfect, very juicy, very tender. Micro-sliced Yukons cook in a garlic, nutmeg heavy cream bath, finished with gruyere. Made an apple-caramelized onion cognac cream sauce with thyme from the pan and broccoli not shown. Great dinner.
