FWIW for better or worse, we don't know how good we have it... or not... They are all in on nose to tail consumption...probably from scarcity and frugality.
I havent been to China in about 12 years...Often id find myself in a rural village with my (Chinese) wife... me being the only white person.. I'd eat things offered.. or ordered while out with the understanding that sometimes its better that I not know what it is..
Having said that I have more memories of good delicious meals than not.
An amazing meal on the side of a rural road.. my wife and the hostess disappeared and went down to the fishpen they had... and picked out lunch..

Fried rose blossom
Basically a Tamale
I guess things have changed though... We never had issues or hoops to jump through to buy gas.. except in Beijing
