This reminded me of another PBS cook (Had to look him up) his name was Justin Wilson and his nickname was The Cajun Chef. Had a good sense of humor, cooked simple cajun meals.

But my favorite was always "The Great Chefs"; the cameras would follow various chefs at different restaurants while a disembodied voice described the creation of a meal, usually from appetizer to dessert. I learned what a salamander was, because it seemed like if you had a Michelin star, your entrees needed to go into the salamander for a quick blast of heat.
