I am fortunate in that my "hunting" is from a buddys living room couch, when we shoot a deer it is butchrred and on ice in about 2 hours from the trigger pull. Seeing as how our muzzle loader season starts in October and we are more likely to be smakicking mosquitos than complaining about cold toes and fingers

Many years ago, when I was a kid, we had some venison that my grandfather or uncle had bagged. I didn't care for the taste, and I even remember my dad talking about it being "gamey".
A few times in the last 15 years, I had a buddy that did hunting gift me some of the deer that he bagged including backstrap, stew meat, and ground, and I never noticed any strong or distinctive flavor. It tasted like meat.
