I wouldn't bother trying to defeat the GPS module electrically. On the 997/PCM 3.x, go into PIWIS and manually code the PCM Navigation option to “W/O Navigation.” Recode it, and the normal Date & Time menu should then allow manual date entry. Set the correct date, then go back into PIWIS and restore the original navigation coding.
Btw, PIWIS 3 appears to expose the relevant coding more clearly than PIWIS 2, so if the option genuinely isn't present in your PIWIS 2 software, borrowing/renting access to PIWIS 3 may be the easiest route.
