'67-69 Camaros ... are like bellybuttons - everybody has one. Seem to be the hot rodders favorite.
I'm a Mustang man myself - resto-mod'd my '66 fastback in the early '90s. Personally, I think a vintage Mustang would be easier and cheaper to tinker with over the long run. Chevy engine parts are cheap, but not much else seems to be.
A web search should yield a ton of Camaro clubs, vendors, etc.
