Ah, the much vaunted "crack the pot lid" technique, favored by amateurs in the trade. Yes, for many years I produced pasta in this fashion, occasionally losing some of it. It wasn't until very recently that I developed my newest technique, which though it does salvage all of the pasta, makes a significant mess. In retrospect, it's a tradeoff -- the memories of digging pasta out of the garbage disposal really take me back... (teary eyed) Thanks, John.
