I think it is important to have the bottom cooling tin. Not only is it how the engine was designed, but leaving them off will give you a temperature gradient (difference) from the top of the cylinders to the bottom. These plates were meant to deflect some air around to the bottom, and without they just go down and out the sides.
For an example of what happens when you have a temperature gradient: think of putting a glass of icewater on the stove, it will crack. (a little extreme) But not so drastic for the engine just bad for wear

Both cars that I have had previous owners that didn't do things the right way. I feel that getting it right the first time is way better than going back to do it again.
Your local junkyard probably has an old bus, go out and see if ya can't gettum cheap.
