Sedona has some nice parks, one of them even allows dogs. You can wander around Oak Creek and hike a bit or just sit half in the sun and half in the water.
Some say the Grand Canyon is just a big hole in the ground, but I find it awe-inspiring.
Jerome is a mining-town-turned-art-community that is pretty interesting to walk around in. At least my wife liked it.
The Sonoran Desert Museum near Tucson is not to be missed. Lovely walks to be had there.
Out here, though, no matter what you do you're going to have to deal with twisty mountain roads. Just be careful. Buses do it...
