Yes it can be done, though it is safer to use a stiffer spring weight, which may make the ride a little too harsh for a daily driver.

The upper shock mounts should be adequate, but if you wanted an extra margin of safety, you can weld in some reenforcements.

You could also use a lighter torsion bar in place of your current one, then the coil overs are doing most of the work rather than all of it. That would also allow you to use a lighter spring weight

The torsion bar carrier is integral to the car (it helps support the torque tube) and it is not recomended to remove it.
