The restriction of the old laws was broken with the new covenent (Jesus Christ). Acts chapters 10-11 are explicit in the dietary law change.
Those restrictions were under the old covenent, before Jesus made his sacrifice for us under the new covenent. It was not deemed important enough by God to put it in the ten commandments. Kind of interesting when you think about it. They didn't know much about food preparation back then. The Lord's commands kept them from touching raw pork, made them wash often, and quarantined sick people. All good things to do to keep the tribe healthy.
Their sacrifice was tied in as well. Which part of the animal was to be burned as a sacrifice? The fat. So they were also on a limited fat diet.
