Whe I was a kid, my mother used to make mincemeat from the pig's head. She'd order one cut in half, take out the brain (to feed to my dad in scrambled eggs) and boil the two halves. Afterwards, she'd pick the meat off of the head and use it for the mincemeat. Then, she'd chop up the nose, lips and ears and put them in cornmeal mush she would make from the broth that was left over. Haven't thought of that in years.
