My wife and I did our honeymoon in Belize in 2000. It was awesome.
We stayed on Caye Caulker. We spent a couple of days just hanging out fishing on the dock using only a line, hook and bait purchased at the local store. We gave any fish we caught to locals who were literally there to catch their dinner. The hotel room was something like $20 per night, and the fishing was free. Caye Caulker is definitely more rustic than the big island but we were up for an adventure.
Belize city is a big, dirty 3rd-world dump. All of the people we met in Belize were genuinely wonderful, but I'd recommend not spending too many of your precious vacation days in the city because there just isn't much to do there.
The trip to Tikal Guatemala was also incredible. The border crossing was a bit scarry (lots of shady characters trying to "change our money") but one we got to Florence, it was really beautiful. The massive ruins in the jungle with "tucan" birds flying around and monkeys everywhere was quite an experience, if you like the archeological kind of thing.
