I believe the US-version DVD of season 1 will be out this fall.
My suggestion - you've already seen the mini-series, which lays the groundwork for the series. Jump in and start watching the Season 2 episodes now, or you'll get even more behind.
Besides, if you have any questions, there are plenty of folks here who can fill you in on the details.
They may also start airing the season one episodes again on other channels besides Sci-Fi - just keep an eye out.

PS: Something to ponder: ever notice how the 'toaster' cylons are a bad shot? I mean with all the technology, you'd think they can pick off an apple on a person's head from 100 yards away! Yet, often they fire their guns and miss their targets. I think I have an explanation: consider the fact that their red eye is moving back and forth. Must be hard to focus -- imagine firing a gun with your field of vision moving back and forth!!
