Rebuilding teh Solex's to excellent condition should be done by the experts- Harry Beiker for one, they will come back to you in as-new condition. Nothing short of perfect, it'll cost you $800.
You wont regret it.
Or for a couple hundred less you can buy brand new never used webers and adapter plates (dont use ther weber manifolds, you'll never get the spark plugs out), bolt them on trouble free and have a wide variety of parts and modificatons available when you need them. Also a good idea, you wont regret it.
It all depends on how original you want to keep your car.
If you tried both you would probably NOT notice any real performance difference if they're tuned right- no matter what anyone says.

I run Dellorto's personally, and my car runs like its fuel injected, usually better than my Jetta.
