I thought that too. But when Galactica was getting ready for it's first jump to the ammo depot, Adama was going on about how the whole Cylon fleet was between them and the depot. When Adama said he was going to jump there rather than cruise there, Tigh said something about "You're going to do what nobody in 20 years has tried to do."
This last statement made me think that FTL travel was not something they wanted to do on a regular basis, but only under emergency/wartime conditions.
Later, Colonial 1 left behind a bunch of ships that were not FTL capable, indicating that getting to and fro between the colonies didn't require FTL travel.
The more I think about it...the less I think the writers had thought about it.
