try my elk recipe.
heat oven to 400. preheat, iron skillet in there. then set the hot skillet on stove top set to "FIRE!" , add salt/pepper, and sear on both sides. 2-3 minutes. then put the entire pan back in the oven and finish it to med rare. rest meat, i set it on a rack made out of chopstick, and loosely cover it with foil. then ponder your pan sauce.
