You can use Lindsey Racing, Jong Bloed, Kinesis, Fikse, CCW, and BBS to name a few. Lindsey Racing requires that you provide 4 donor 16x6's for the centers. Jong Bloed can make any size wheel that you need. Kinesis has recently been sold to a non-competition oriented company so the verdict is still out whether or not their product and/or customer service will change. CCW is out of Florida and is the least expensive of these options. BBS is limited to one size so the others are better options. Fikse is good quality and can also be made to custom widths.

You can go with 17x8 and 9's with enough camber and rolling or cutting out the fender lips. The east coast PCA racers have been able to fit 245's and 275's under stock body work. You probably don't need to go this wide so 225's and 245's will work fine for most appilcations.

You can also go with 18 inch wheels in 8 and 9 inch widths with the same tire sizes mentioned above.

I chose to go with Jong Bloed racing wheels because they are made in Morgan Hill, CA to you specifications, have rapid turn around time, and have a great reputation for light weight and durability.
