Good questions. I am building a PRO3 e30 (kind of like a Spec e30) and the wife drives a e36 328is on the track (gutted, a/c delete, the stereo and sunroof are next)
Looking at things I will never need like the washer reservoir level sensor, I think the best bet will be to unwrap the harness and trace it back to the source. I think most thing end up either at the relay board or fuse panel. If things are cut, the risk of shorts increases.
I am not quite ready to start on the wiring yet so keep me posted on how it goes.
