Cylinder head help.

I recently let my local machinist rebuild a set of 2.7 heads for me. He is good at what he does, and said that he had done some Porsche work in the past, and was comfortable doing them. My mistake. 5 of the heads look real nice, but I think he had trouble chocking one (probably the first one) up straight in the mill when he was cutting the head/cylinder sealing surface. The sealing surface is clearly not parallell with the cam housing surface, and I am wondering if he removed equal ammounts of material on the other 5 heads that look O.K.. I guess I will need at least one head. How do I go about measuring up the other 5. I assume there is a maximum ammount of material that can be removed before the combustion chamber becomes to small. I think I already knew better, but gave him a chance any how. I am glad it is my motor and not a customers. Any advice, I think I will give henry a shot,
