55 belaire is my favorite old Chevy.
I know nothing about restoring cars but I agree with Thom and others here, if you get something that runs and rolls you are (I have been) much more motivated to work on it.
I had a 66 Rambler that was great fun and super easy to work on. I am now working on my 84 944 (that after three years has started leaking water and overheating).
