You can split a CAT5 cable, but it would be out of spec, etc. You can run 10mb network over 2 pair and 2 phone lines over the other 2 pair. Need a hub/switch if you want to connect more than 2 computers, or a crossover cable if you just want 2 computers connected.
The good news is that plenum rated cat5 is cheap and easy to work with. You'll need the appropriate crimp tool to put the connectors on the end though.
