Stilton is my most recent experiment. I quite like it. The first bite or two is really strong, but after that, I guess my nose gets used to the smell and the flavor mellows a bit. I guess I'll have to buy some pears.
I've got my first batch of just Stilton in the fridge now. Before this I had some "Double Gloucester w/Stilton".
