If you can make dash tops with it, and sell them for the same price as the current plastic overlay cost, you should be able to sell a decent number of them. But again, that's not a "keep your car off the road" sort of part.
I think the intake boots may be the biggest one; they are critical for L-jet systems (which HATE vacuum leaks!) and nice to have for D-jet systems. The 1.7 boot may be NLA, too, and there should be more 1.7s around than 1.8s or 912\Es. The "manifold boots" (AKA the big fat hoses from the manifold to the intake runner pipes) were NLA recently; not sure if they still are or not. If so, repop'ing those could be worthwhile.
