What hasn't been mentioned concerning "Bullit" is Lalo Schifrin's music. Next time you guys watch the movie, play close attention to the soundtrack: it's like a second point of view to the movie; it works that well with the action, particularly the build up to the chase scene.
According to Schifrin, the reason no music accompanied the chase scene is because he thought the Mustang and Charger engines was music enough.
It's really an excellent movie because of what ISN'T said, particularly about a cop who's about to crack. Minimal dialogue, lots of dry language - brilliant.
Also, what everyone seems to forget in place of the chase scene is the ending with McQueen and the antagonist running around, dodging passenger jets on the SFO runways.
BTW: I thought the "double-clutching" was McQueen hitting the Mustang's rev limiter.
