Just go to your local outdoor store and look at the books. Pick out whichever one you think will work the best for you and your dog. Some of the books will teach on a rewards (food) basis and some punishment (fear) both work I guess but I would prefer to go the food route.
I can tell you that some of the best things you can do are to get a dummy and Ty-wrap some wings to it. then throw that around so your dog gets used to the smell and taste. After a while hide it under some brush then tell your dog to "go find the bird." When he is doing good with that (not chewing not playing tug of war etc) find a captive breeder, you can buy live pheasant for less then 10 bucks each. The breeder can explain how to set the birds and what not. You will need to teach your dog that if you miss the bird he cannot chase the damn thing for the next 3 miles across private property and god knows what else.
