We tend to recruit in groups twice a year - and process is lengthy enough to require an overnight stay. It's an opportunity to 'observe' closely.
There's no substitute for an evening on a few beers to work out if you like a bloke. An interview is a 40 minute performance, a whole evening with some lubrication soon identifies the misfits...
I'll add that I also respect non-drinkers. I'm smart enough not to drink at work functions. Learnt the hard way
