Gyp. board would be a good choice. Perhaps some cement board 4' and below for durability, especially if you're constantly bashing things into the walls (lawnmowers, bicycles, thrown tools during "frustrated" moments of P-car wrenching, etc.).
But good old gypsum board will be fine all by itself too.
