The 3.0 is known for breaking the Dilivar studs - not pulling them.
Don't assume that your mechanic will check the head studs when doing a valve adjustment.
I can't think of anything that would cause this sound after doing a valve job - unless your mechanic had to remove part of the exhaust to get to them, and now you have an exhaust leak. This would be my guess as to what's making the noise.
