Drain all the oil before you try and replace them. I don't htink it maters which way the larger end faces.
I've done this several times and have had very good luck using a hose clamp our two to install them. Position it so you can use large channel locks behind it and lever off of part of the exhaust. You won't risk cruching them and it really gets them in tight.
