Rick, we did that at our wedding. It's not as easy as I thought it would be... my wife and I had to really drive the message home.
Word of advice: some people will insist on giving, so we listed a few favorite charities on the wedding invitation that they could donate to. Makes it easy for them, and saved us getting stuff we didn't want or need.
