Jack,
I spent three weeks after Christmas in Ireland a few years ago for school. The weather really wasn't all that bad, we even had some very nice sunny days. We basically made a loop around the country starting and finishing in Dublin. Have a good trip just be prepared for the weather. PM me if you want me to look up where we stayed--mainly smaller places.
