OTOH, I'm running some sort of 64 bit Quad xeon Dell with a Quadro 4000sdi graphics card driving a 2560x1600 Dell LCD . . . it's kinda old, so which pretty Mac do you think I should replace it with? I run engineering app's, btw.

How about an 8 core Xeon ( 2x Quad 3GHz Clovertowns) Mac Pro? You could run Unix, Linux, Windows or OSX. Pick the NVIDIA Quadro FX 4500 GPU(s) and a 30" (or two) display (2560-by-1600).
4 HD Bays and up to 16GB of memory.
Best,
Kurt
P.S: For your benefit, I will assume you were not previously touting Dell machines as having "superior engineering" over Apple machines . . .
