I just did mine that way last night (for the second time in 5 days ). If you jack up one side, you can remove the valve covers on the high side without draining the oil. Once that side's done, put it back together and repeat the process on the the other side.

Make sure you keep track of which cylinder is at TDC (easier said than done at 12:30 Friday night/Saturday morning).

BTW -- if this is your first attempt at adjusting your valves, I HIGHLY recomment you read this post, especially the contributions of 2.7RACER. I tried it the traditional way on Sunday and adjusted every single valve too loose. My 911 sounded like a Volkswagon deisel when I was done. I redid it last night with the "backside" method and it came out perfectly.
