If it swings between the two middle marks, that's normal. If it swings beyond that, try what phoenix_iii suggested first. Did he mention that you don't want any air in the system? The radiator temperature switch might be dirty (build-up will act as an insulator) causing a slow thermal response and result in larger temperature swings.
