There are many different polishes and some are far more aggressive than others.
How often, depends a lot on how the car is used, it's exposure to the elements, how it's washed that kind of thing. So the correct answer for you may be different than for me.
However, to give you an idea if the car is driven and washed regularly I would guess that a fine polishing once or twice a year would be in order. You will be able to tell by looking at the accumulation of defects and marring many of which just are a normal result of the washing process.
My cars are mainly garage queens and can go a lot longer...but regardless it's not just for finishes that are old and faded....
