It sounds like you need to switch to another insurance policy -Agreed value.
Go to a collectors insurance for this car. I am with American Collector Car insurance.
Set the price, based on the upgrades and what you would have to spend to have the same car.
Cheaper than you think. Better $100 coverage. etc...
