As for apps, just about anything you can think of that would be useful on a handheld device such as Palm, HP iPaq or Iphone. The main thing that makes these apps nice is when used in a WI FI area.
I used an HP iPaq for the fast 3 years and now my iPot is able to replace it and give me all the features I wanted.
Turning the iPot into a "Brick" is possible but from first hand knowledge if you follow the instructions for the Jailbreak then it's a no brainer.
